I’m Chef Blacks. I’ve always wanted to have my own restaurant. My mission is to bring to you all these wonderful high quality Caribbean delights at an affordable price. With the help of consultant Chef Ashton Brown we have catered for celebrities like Chris Gayle (West Indian Cricketer), reggae artists Morgan Heritage and premiership footballers like Shaun Wright Phillips and Rio Ferdinand.
Chef Ashton has now returned back to Jamaica to continue running his own business, one of the best Jerk Centre on the Island, Express Jerk in St Ann’s. Although he returned to Jamaica his legacy lives on.
Dwayne better known as ‘Blacks’, is a Jamaican, who has been living in the UK for over ten years. Even at an early age he showed an interest in the culinary arts by spending hours in the kitchen preparing meals and honing his skills.
Chef Blacks now uses modern technology such as Facebook and Skype to seek inspiration from his grandmother and mother in the kitchen. He visits Jamaica Several times a year where he finds new recipes and ideas to bring back to his cafe.
Before opening his Café to further develop his culinary expertise he would cook for friends and family or catering small and intimate events. But it wasn’t until 2013 that he fulfilled his dream when he and his partner Toyah, opened Caribbean Bites.
What was his concept? Create a simple, Caribbean-style menu using as many fresh, ingredients as possible.
